Foodness Gracious - Week 12

Recipes

After a week of preparing for the Super Bowl and likely enjoying some drinks and chips and dips and all sorts of savory appetizers, you might be like me and want something light.

Foodness Gracious has you covered with our Pan Fried Cod in a Citrus Basil Butter Sauce. It sounds fancy, but we promise it is a very easy recipe for you and the whole family.

As we mention in the recipe, do not forget to allow the fish time to marinate. This is a key step in making the cod incredibly succulent and wonderfully flavorful. We also offer some great ingredient swaps if you are looking for a vegan alternative or want to make sure you are purchasing sustainably.

The “pan fried” part is also key. Make sure you start with a pan that works on the stove top as well as the oven. One excellent option when you know you’re going from stove top to oven is a saute pan with handles on both sides (one for each hand). Check out this 12-inch option that is dishwasher and oven-safe!

Remember to look for clever ingredient swaps and FAQs on more and more recipes every week!

Reviews

Not every kitchen upgrade needs to break the bank. Perhaps you have the same kitchen tools that you’ve had since you got married. Maybe worse…you’re still using some of those hand-me-downs that you were “gifted” from friends.

One such item that won’t break the bank is a new peeler. It’s something so simple, but you don’t know how good you have it until you actually have a great one.

Check out our peeler reviews where we always provide you three great options: Budget, Premium and Responsible.

Try this trick. Purchase a new peeler with your kids (I suggest this one because the stainless steel just looks so dang fancy), then buy a bunch of apples. The kids will love peeling and before you know it, they’re eating apples for their snacks every day!

Responsibility

Ever wondered if grilling removes nutritional value from the food you’re making? What about doing a saute vs. baking?

You’re in luck!

We have an entire Responsibility article to educate you on exactly these questions that will help you both understand and choose which cooking method might be right for you.

One sneak peek into the article is on steaming:

True or False: Steaming can reduce antioxidants in veggies and reduce protein levels in fish?

The answer is False! In fact, veggies retain higher levels of antioxidants after being steamed…broccoli also retains higher levels of vitamin C. Fish retain higher levels of protein and suffer less vitamin and mineral loss.

Check out the article for more great information about nutritional impacts when using various cooking methods.

Poll Results - Best Game Day Chip Champion!

It appears everyone had fun with our Best Game Day Chip bracket over the past few weeks. The best part about any poll is that it is both fun…and polarizing! So many votes were tallied and it all came down to this week.

As a reminder, the championship bracket came down to this:

With 59% of the vote…the winner is (drumroll please)……

NACHO CHEESE DORITOS!

You can dip them or eat them as is. Soooo good! Can’t eat just one. :)

Foodness Facts - Did You Know?

Honey never spoils!

Archaeologists have found pots of honey in ancient Egyptian tombs that are over 3,000 years old and still perfectly edible.

My question is, who drew the short straw and had to eat the honey from the 3,000 year old Egyptian tomb???
