Recipes

Spring brings warmer temperatures and the joys of eating lighter foods and delicious fresh ingredients. If you are like me, you’re ready for a salad that goes beyond the normal by incorporating some ingredients you don’t normally use in your everyday (boring) salad.

With this goal in mind, we introduce you to the Cucumber and Cilantro Salad.

My wife hates the salads with huge leaves of lettuce, or worse those big chunks of lettuce that we’ve all struggled with before. This is more of a chopped salad with cucumber, peppers and cilantro…with an optional kick from some red pepper flakes.

Give this one a try and make it your own! We love the extra kick and add some diced jalapenos and serrano peppers for some smoky heat.

Remember to look for clever ingredient swaps and FAQs on more and more recipes every week!

Reviews

Spatulas come in all shapes, sizes and materials. Different meals, pans and bowls might call for a different type of spatula to get the job done right.

I make eggs almost every morning and I love a silicone spatula that has some flex to it so I can get under those pesky eggs.

However, when I’m making a stir fry or a bunch of mixed veggies, I tend to lean more towards a wooden spatula or something that has less give to it.

Check out our spatula reviews for more great information!

Responsibility

I have been doing a lot of reading lately about whole-food plant-based diets and the alternatives to more “traditional” ingredients. There seems to be more and more products on the market supporting more of these new products and moving away from animal-based products.

We haven’t gone all the way in on this, but there are times where ingredient swaps are very easy and taste great too!

In our article on Responsible Baking, we discuss some of these plant-based alternatives. Did you know you could substitute:

  1. ¼ cup applesauce instead of one egg

  2. Coconut oil instead of butter

  3. Almond or Oat Milk instead of dairy milk (ok, maybe this one was a little more obvious)

Check out more substitutes to be more responsible next time you are baking at home.

Foodness Fun - Poll Results

This was such a fun poll this week and the voters came out in large numbers to vote for their preferred pizza…

Chicago Deep Dish or New York Thin Crust?

The results are in and the winner is Thin-Crust New York Style earning 60% of the vote!

I love when our Foodness Followers add a comment to their poll vote. We had some passionate voices this week!

“Big wide slice, foldable & slightly juicy”

Foodness Follower who knows how to eat a NY-style thin crust pizza!

“Hands down. It’s incredible. We order it from Giordano’s in Chicago.”

Foodness Follower who loves Deep-Dish Pizza

Thank you to everyone for their votes and we will look forward to hearing from you in future food debate polls!

You don’t have to travel to Chicago or New York to get great pizza. Grab yourself a Chicago Deep Dish pan or a New York Thin Crust pan to use at home!
