Foodness Gracious - Week 28

Foodness Gracious

Recipes

My daughter had her wisdom teeth removed this week, so her menu variety has been quite limited. Lots of soft foods like applesauce and mashed potatoes.

Oh, and a shocking amount of macaroni and cheese.

She is just fine with the cheap box style of macaroni and cheese (she’s been eating it since she was tiny). Me, on the other hand, I prefer it homemade and with some style!

By style, I mean langostino. Wait…what?

Langostino is the little cousin of the lobster…and it is unbelievably delicious. When you mix the rich flavor from the langostino with the cheesy and gooey cheese sauce, I would go so far as to say it is divine. And that is a word I don’t say very often.

Get out of your comfort zone with this Langostino Macaroni and Cheese. It bakes beautifully in this ceramic casserole dish. If you’re strategic and make it after your child has their wisdom teeth removed, that just means more for you!

Remember to look for clever ingredient swaps and FAQs on more and more recipes every week!

Responsibility

Lectins are proteins found in many plant foods, known for their role as "anti-nutrients" that can inhibit the absorption of vital minerals like calcium and iron. These proteins are the focus of lectin-free diets, which aim to reduce or eliminate them to address health issues such as inflammation and gastrointestinal discomfort.

Interest in lectin-free foods has surged, driven by endorsements from celebrities and influential books like "The Plant Paradox." Given the amount of chatter about lectins in the news and on social media, we wanted to share a Comprehensive Guide to Lectin-Free Foods.
