There is nothing my family loves more than Mexican food. If I think back over the past 24 years of my marriage (yes, we celebrated 24 years last week…happy anniversary to my wife, Stephanie!), Mexican food has been a weekly staple because it is so versatile and feeds every appetite from the daring to the picky.
Our Spicy Chicken Taco Salad brings the heat with just a few different seasonings, black beans for some extra protein, avocado for that good fat and I love to top it with lime wedges because it looks cool and gives it an extra zing.
Versatility is the name of the game with this one. Go with mild cheddar if you don’t love as much spice. Throw in some pepper jack cheese if you want to raise the spice level. Even more daring? Chop up some jalapenos or even serrano peppers if you want to bring a spicy smokiness to the dish.
Have fun with this one! It is a perfect option for the summer months because of all the fresh ingredients and your ability to keep the calories low for swimsuit season!

We have found that grating our own cheese is a money-saver and it just simply tastes better. That is what led us to do a product review on three different graters. Yes, bagged shredded cheese is super convenient, but shredding your own cheese not only tastes better, but it also melts sooooo much better.
There are times where a kitchen tool comes into your life and changes your home chef game. This grater is one of those. We love onion (see the spicy chicken taco salad above), but we hate the tears that come with it…and the work. This grater changed that game for us. It removes the work and the kids LOVE doing it for us!
Responsibility
I previously mentioned my nephew who has a peanut allergy. I’ve seen this allergy all his life and the pain this is for their family at school, restaurants, birthday parties, sleepovers and so many other times when his parents can’t keep an eye on him every second.
What I didn’t realize is that he is very much not alone. Food allergies impact 33 million Americans and an estimated 5.8 million children under the age of 18. All this talk about taco salads has me thinking about how my version of the perfect taco salad may be very different from your version of the perfect taco salad. We likely have common ingredients like lettuce, cheese, tomato, etc.
